Ingredients
- 2 pints cherry tomatoes
- 2 tablespoons olive oil
- 1/4 c sherry wine
- garlic salt
- red pepper flakes

Preparation
Step 1
Place 2 pints cherry or grape tomatoes in a large bowl.
Drizzle olive oil over, enough to coat lightly (a couple tablespoons). Add sherry and stir.
Season with salt, pepper. May use garlic salt if desired.
Sprinkle on dried red pepper flakes, to taste.
If it isn’t the time of year when tomatoes are sweet, add ½ tsp sugar if desired.
Spread in single layer on baking or cookie sheet.
Roast in 400F oven until tomatoes start to wrinkle and a few have burst.
