Ingredients

  • 1/2 cup dried apricots cut into quarters
  • 1/2 cup water
  • 3/4 cup sugar
  • 1 Tbs. sugar
  • 4 egg whites
  • 4 1/2 cups unsweetened shredded coconut

Preparation

Step 1

combine apricots, water, and 1 Tbs. sugar in small saucepan
poach apricots over med. heat until tender and about 1 Tbs. liquid remains
about 5 min.
cool slightly
puree in food processor
add remaining sugar and eggs
process smooth
beat mixture and coconut until hold together when pinched
shape 2 oz. cones or balls
arrange on parchment lined baking sheets 1" apart
bake until tops are well browned
15-20 min.
remove and cool on wire rack
store airtight
