Ingredients
- 4 3oz. chicken cutlets
- 1 tbsp grated parmesan cheese
- 1/4 tsp ground pepper
- 2 tsp olive oil
- 2 tbsps sliced almonds
- 1/2 cup low-sodium chicken broth
- 2 tbsp dry white wine
- 2 garlic cloves, crushed
- 2 tbsp freshly chopped basil
- 1 tsp butter
- 1 tsp fresh lemon juice

Preparation
Step 1
Sprinkle chicken with parmesan cheese and pepper (both side)
Heat 1 tsp of olive oil and saute chicken till cook through.
Transfer to a platter.
In same skillet, heat remaining tsp of olive oil, toast almond till golden, transfer to a bowl.
Combine broth, wine and garlic and 2 tbsp of water and bring to a boil and reduce by half.
Remove from heat, stirring the almonds, the basil, butter and lemon juice.
Serve chicken and top with the sauce.
