Ingredients

  • 4

    3oz. chicken cutlets

  • 1

    tbsp grated parmesan cheese

  • ¼

    tsp ground pepper

  • 2

    tsp olive oil

  • 2

    tbsps sliced almonds

  • ½

    cup low-sodium chicken broth

  • 2

    tbsp dry white wine

  • 2

    garlic cloves, crushed

  • 2

    tbsp freshly chopped basil

  • 1

    tsp butter

  • 1

    tsp fresh lemon juice

Directions

Sprinkle chicken with parmesan cheese and pepper (both side) Heat 1 tsp of olive oil and saute chicken till cook through. Transfer to a platter. In same skillet, heat remaining tsp of olive oil, toast almond till golden, transfer to a bowl. Combine broth, wine and garlic and 2 tbsp of water and bring to a boil and reduce by half. Remove from heat, stirring the almonds, the basil, butter and lemon juice. Serve chicken and top with the sauce.
