Banana Maple Muffins

Ingredients

  • 300 g (2 1/3 cups) self-raising flour
  • 40 g (1/3 cup) plain flour
  • 1/2 teaspoon bicarbonate of soda
  • 115 g (1/2 cup light brown sugar
  • 60 ml (1/4 cup) maple syrup
  • 250 g (2/3 cup) mashed banana-about 2 small bananas
  • 2 eggs, lightly beaten
  • 250 ml (1 cup) buttermilk
  • 80 ml (1/3 cup) vegetable oil

Preparation

Step 1

Preheat oven to 200°C.

Sift flours, bicarbonate of soda and sugar into a large bowl; stir in syrup, banana, eggs, buttermilk and oil just until combined.

Spoon mixture into muffin pan. Bake for about 20 minutes. Turn onto wire racks to cool.
