BREAST****Lebanese/Greek Garlic-Marinated Chicken

Ingredients

  • 8 ounces skinless, boneless chicken breast, cubed
  • 1 clove garlic, minced
  • pinch of sea salt
  • 1 tbsp. lemon juice + grated zest
  • 1 tbsp. olive oil
  • 1 tsp. dried oregano
  • 1/4 tsp. smoked paprika

Preparation

Step 1

* Mix garlic, salt, lemon juice and grated rind, olive oil, paprika and freshly ground pepper to taste.

* Cube chicken and add to mixture. Refrigerate several hours or overnight.

* Thread chicken cubes onto skewers and cook on hot grill or indoor grill, turning frequently and basting with leftover marinade until just done. Don't overcook or they'll be dry!

* To make in Actifry, remove from fridge 1/2 hour before cooking. Add to Actifry bowl and cook for 8 to 10 minutes.
