Ingredients
- 2 cups black beans, drained
- 2 cups corn, drained
- 6 Tbsp. fresh lime juice (or juice of 1 lime)
- 5 Tbsp. olive oil
- 1/4 cup red onion, minced
- 1/4 cup scallions, minced
- 1/8 cup cilantro, minced
- 1 1/2 tsp. cumin
- 1/2 cup chopped tomatoes
- Salt and pepper, to taste
Preparation
Step 1
Mix all ingredients, except the tomatoes, together.
Add salt and pepper. Cover and chill.
Shortly before serving, toss in the tomatoes.
Makes 4 servings
