  • 1/4 cup finely chopped shallot
  • 3 Tablespoons butter
  • 2 sprig thyme
  • 1 bay leaf
  • 1 cup red wine
  • 2 cups chicken stock
  • salt
  • pepper


Preparation time 15mins
Cooking time 45mins


Step 1

Sweet the shallots in butter with a little crushed pepper, a 2 small sprig of thyme and 1 bay leaf. Add the red wine and reduce by two-thirds. Add the stock and simmer gently until sauce is thick. salt pepper
