Ingredients

  • 2 cups sifted all purpose flour
  • 4 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter, chilled but not hard- cut into chunks
  • 1 egg
  • 1 cup milk
  • 20-30 ripe Italian plums, pitted and halved
  • 2 tbsp melted butter
  • 4 tbsp sugar
  • 1/2 tsp ground cinnamon

Preparation

Step 1

1. Grease only the bottom of a 11x7x1 1/2 baking pan. Preheat oven to 350
2. Sift flour, salt and baking powder-Cut in the chilled butter with a pastry blender until mixture resembles coarse corn meal.
3.Beat egg and milk together then stir into flour mixture until blended
4.Spread batter into pan, arrange plum halves fresh side up in neat rows on batter. Brush plums with melted butter. Combine sugar and cinnamon and sprinkle over plums
5. Bake for 30-35 minutes
6. Cool in pan before cutting and serving
