Zucchini Casserole

  • 2 medium zucchinis
  • 5 plum tomatoes
  • 1 1/2 cups grated cheddar cheese
  • 1/3 cup parmesan cheese
  • 2 tablespoons chopped onion
  • 1/4 cup butter + more to coat pan
  • 3/4 cups bread crumbs
  • 2 crushed garlic cloves
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • dash salt and pepper

Step 1

Step #1:

Take out a nine by nine inch pan and frivolously coat with butter. Mix in a bowl one and a half cups of grated cheddar cheese, half a teaspoon of basil, one third of a cup of grated parmesan cheese, two crushed cloves of garlic and half a teaspoon of oregano plus a dash of pepper and salt.

Step #2:

Finely slice two medium zucchinis and place half of the slices on the nine by nine inch pan. Take the mixture in the bowl and dust about a quarter of it on top of the zucchini.

Next, thinly slice five plum tomatoes and place them on top of the zucchini in the pan. Again, dust about a quarter of the mixture on top. Then you need to repeat each layer again and do the same thing.

Step #3:

Put a frying pan on the stove and turn the heat on medium.

Add one quarter cup of butter and let it melt. Chop two tablespoons of onion and add it to the frying pan. Fry until almost transparent. Mix in three quarters of a cup of bread crumbs and fry until all the butter is immersed. Dust it over the zucchini and tomatoes. You can also add cheese on top – just keep in mind it is not the best ingredient for weight loss But feel free to add some if you wish!

Step #4:

Lightly cover the pan with aluminum foil. Place it in the oven and bake for twenty five minutes at three hundred and seventy five degrees. After that, take off the aluminum foil and keep baking for approximately twenty more minutes. Try this recipe – it’s really really good! And makes losing weight and keeping up with your diet SO much easier! I know I can easily lose 5 pounds or even more in a couple of weeks when I switch to foods like this!
