Veronica's Easy Spanish Rice

"DH wanted Spanish rice one night so I made the following recipe that I got from Betty Crocker. OMG, it was just like eating my mom's. I forgot how good her spanish rice was!!! Try it, you won't be disappointed!!! Serve as a meal in its self or as a side dish."
Ingredients
- 1 cup uncooked rice
- 1 medium onions, chopped ( I like onions so I used a large one)
- 2 tablespoons vegetable oil ( I used olive oil)
- 2 1/2 cups water
- 1 (8 ounce) cans tomato sauce
- 1 small green bell peppers, chopped
- 1 1/2 teaspoons salt
- 3/4 teaspoon chili powder
- 1/8 teaspoon garlic powder
Preparation
Step 1
In a large skillet, heat the oil over medium heat.
Add rice and onion and cook (about 5-10 minutes) stirring occasionally, until rice is golden brown and onion is tender.
Stir in remaining ingredients and bring to a boil.
Reduce heat, cover and simmer for about 30 minutes, stirring occasionally, until rice is tender.

This is the best Spanish rice recipe I have tried so far and definitely the easiest. My husband loves rice beans and tortillas once a week.
This is a great recipe and very easy to put together. I only put in 1 tsp. of salt and I simmered it slowly for close to an hour. It is a wonderful addition to my cookbook.

My boyfriend is hispanic (I am not) and is not always a big fan of my hispanic cooking but he LOVES this rice every time I make it! I even throw meat in it (chicken or ground beef) and call it a day! I do make several changes- I use chicken broth instead of water, 1 can of green chilies instead of the bell pepper, 1 packet of goya sazon, 2 tbs of Sofrito, and 1 tsp cumin. I also mince a jalapeno (or 2!) and add it at the end.
Easy and YUMMY! This is an excellent recipe. We used chopped green chiles instead of green peppers. Everything else was left the same. Thanks!
I made some changes:
2.5 cups of water - I used 2 cups chicken stock & a half cup of white wine, Green peppers - I used green chilis,
8 oz tomato sauce - I used 4 oz tomato sauce & 8 oz petite diced tomatos
White rice - I used wild rice
I love the Near East brand of Mexican rice and this tastes a lot like it. I don't like bell peppers, so I used some jarred jalapenos instead. I also used brown rice.

Loved this recipe. I bought some tamales at Costco and needed another side to go with them. I changed the recipe like a couple people mentioned subbing Chicken Broth, Green Chili's (Great idea) and Diced Roasted Tomatoes/Tomato Sauce but stuck with the White Rice. It had a very good flavor and the instructions were right on. Thanks for a great one.
I thought this turned out pretty good. My only issue was I thought it came out too moist. I think if I make it again, I'll make it in advance of the meal and set it in the oven at low heat till it dries out a bit. I thought the flavor was good and liked the addition of the chili powder. I added a chopped jalapeno. Thanks for posting the recipe.

This deserves 5 stars because it is hard to find such a simple and easy spanish rice that actually has some flavor. I took it to a family "Mexican Fiesta" themed pot luck and it was a big hit. The chili powder gives it a nice understated kick. FANTASTIC recipe!

Quick and easy Spanish rice. I cut the salt back to 1 teaspoon (due to dietary restrictions) and served this with chicken enchiladas and refried beans.
Love love love this! I used brown rice and added some banana peppers because we were out of green. It was so easy and delicious!

I agree that this is the best Spanish rice dish! I have been making it for my family for 30 yrs. My Mom used to make it for us & added a lb of hamburger for a great supper!

Very good, made it with small can of green chiles instead of green pepper.
Yum. I used jasmine rice, so reduced the water to 1 1/2 cups and only had to simmer 25 minutes. Upon other reviewers' suggestions, I upped the chili powder, and added 1/2 teaspoon cumin and 1 teaspoon oregano. Also, I used corn rather than diced green pepper-- that's what I had on hand, and it worked just fine. This was really delicious and I am so happy to have found a good Spanish rice recipe! Will definitely make again.
I made this in bulk as a side for a mexican meal at my church. Went over well. Super easy to prepare by a novice "chef" but also works as in substitution for the "boxed" versions of spanish rice. Slightly salty but great flavor overall! Exactly what I was looking for, and has become a standby in my collection!! Thanks!
This was easy and yummy, and made lots. It's just as good leftover the next day. I served it as side dish for meatloaf together with steamed broccoli. The only thing I did different was add a little bit of bacon grease when sauteeing the onions and rice, and one slice of cooked crumbled bacon along with the rest of the ingredients.
This is the best Spanish rice recipe EVER! It is almost every bit as easy as making the packaged stuff, but it tastes 100% better. It's as good (if not better) than any I've ever had in a restaurant. I have definitely added this easy, tasty recipe to my cookbook!
