Ingredients
- 1 large whole wheat pita bread round(s)
- Nonstick cooking spray
- 1/4 cup assorted vegetables (such as small broccoli or cauliflower flowerets, chopped red sweet pepper, sliced fresh mushrooms, and/or finely chopped carrot)
- 2 tablespoons pizza sauce
- 2 tablespoons shredded mozzarella cheese
Preparation
Step 1
1. Place pita bread on a baking sheet. Bake in a 400 degree F oven for 5 minutes.
2. Meanwhile, coat a small skillet with cooking spray. Heat over medium heat. Add the vegetables; cook and stir until crisp-tender.
3. Spread pizza sauce onto pita bread; sprinkle with cooked vegetables and cheese. Bake for 8 to 10 minutes more or until light brown. Cut in half and serve warm. Makes 2 servings
