Ingredients

  • STREUSEL TOPPING:
  • 1/4 c. butter, softened
  • 1/2 c. sugar
  • 1 egg
  • 1 c. fat-free milk
  • 1/4 c. unsweetened applesauce
  • 1/2 tsp. vanilla extract
  • 2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. fresh or frozen cranberries, coarsely chopped
  • 2 1/2 tsp. grated orange peel
  • 2 tbsp. all-purpose flour
  • 2 tbsp. brown sugar
  • 1/4 tsp. ground cinnamon
  • 2 tbsp. cold butter

Step 1

1. In a large bowl, beat butter and sugar until crumbly, about 2 min. Beat in egg. Beat in the milk, applesauce and vanilla. Combine the flour, baking powder and salt; stir into butter mixture just until moistened. Fold in cranberries and orange peel.

2. Coat muffing cups with cooking spray; fill three fourths full with batter. For topping, combine the flour, brown sugar and cinnamon in a small bowl. Cut in butter until crumbly. Sprinkle over batter.

3. Bake at 400 degree F. For 18-22 min or until a toothpick inserted near the center comes out clean. Cool for 5 min before removing from pan to wire rack.
