Old time Corn Bread Muffins

Ingredients

  • 1 1/2 cups milk
  • 1/3 cup vegetable oil
  • 1 egg
  • 2 cups yellow cornmeal
  • 1 cup all-purpose flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt

Preparation

Step 1

1. Preheat oven to 425°F.

2. Coat a 12-cup muffin tin with cooking spray.

3. In a large bowl, combine all ingredients; mix well. Spoon batter into muffin cups and bake 18 to 20 minutes, or until golden. Serve warm.
