Lemon Chicken Skillet Baked Recipe
This delicious dish was another cast iron success! The wonderful thing with cooking like this is you can season and cook your whole meal in one skillet.
- 4 Chicken Breasts
- 4 small – medium potatoes quartered
- 1/4 Pound Green Beans (I used a Quart)
- 1 Tsp Salt
- 1 Tsp Pepper
- 1 Tsp Lemon Pepper
- 6 Tbsp Olive Oil
- 1/4 Cup Lemon Juice
- 1 Lemon
- Note: You can add Garlic or Onions if you like them. 1 Tbsp of Garlic Powder or one onion or both would be very good.

In a large Cast Iron Skillet or Baking Dish use 1 Tbsp Oil to coat the bottom.
Slice Lemon into thin slices and cover the bottom with it.
In a large Bowl mix all the other, oil, Lemon Juice, salt, Pepper, and 1/2 Tsp Lemon Pepper.
Put Chicken, Potatoes and Green beans in and toss well.
Lay Chicken on Lemon slices and put the potatoes and Green Beans around the sides.
Bake in Pre-Heated 400* oven for 50 – 60 minutes.
Check after about 40 – 45 minutes and if the potatoes are brown enough cover with aluminum foil to keep them from getting too brown.
