Mint Chia Kefir

Ingredients

  • 2 cups kefir  (we prefer our homemade coconut kefir)
  • 1/4 cup chia seeds
  • very large handful of fresh mint
  • 1-2 tbsp lemon juice
  • 1 about 1 tbsp sunflower lecithin (optional, but we love it)
  • 2 packets of stevia (we use SweetLeaf, although use your favorite sweetener)
  • Here are some other variations we have done that we absolutely love just as much.
  • add 1-2 small cucumbers
  • and/or
  • add 1-2 tsp spirulina
  • and/or
  • add1-2 tbsp cacao nibs
  • and for extra protein boost
  • add 2 tbsp hemp seeds

Blend together in the Vitamix.
