Ingredients
- 1/2 cup graham cracker crumbs
- 2 tbs butter or margarine melted
- 2 tbs preserves [strawberry or raspberry]
- 1-8 ounce package of cream cheese
- 1/2 tsp vanilla extract
- 1 egg
- 1/4 cup sugar
Preparation
Step 1
Combine graham cracker crumbs and butter, stirring well. Line 1 3/4 inch muffin pans with miniature paper liners. Spoon 1 tsp crumb mixture into each liner and gently press into bottom of pan. Beat cream cheese at high speed of an electric mixture until light and fluffy, gradually add sugar and mix well. Add egg and vanilla and beat well. Spoon the mixture into the liners. Bake at 350* for 10 minutes
