Ingredients
- GINGER SOY DRESSING:
- Ginger Soy Dressing
- 1/4-1 lb pork tenderloin
- 3.75 oz bean threads or cellphane noodles
- 2 cups shredded napa cabbage
- 2 med carrots shredded
- 1 cu thinly sliced radishes
- 2 cups torn boy choy or baby bok choy
- 1/2 Cilantro leaves
- 1 recipe wonton crisps
- combine 1/3 cup veg oil, 3 tbs lime juice, 3 tbs rice vinegar, 1tbs brown sugar, 1 tbp grated fresh ginger, 1tbs soy sauce, 1 tbs honey, t tsp toasted sesame oil, 1/4 tsp salt 1/4 tsp crushed red pepper. Cover, mix well. Refrigerate up to 3 days.
Preparation
Step 1
Sprinkle pork with salt & pepper. Roast 25 minutes at 425 degrees or until 155 degrees, brushing with 1 tbls of dressing the last 5 minutes of cooking. Cover let stand 15 minutes:

Prepare noods per pkd. rinse with cold water. snip into short peices, add cabbage and toss.
In 3 qt dish layer noodes, carrots, port, radishes. Drizzle with 1/2 of dressing. Tope with bokchoy and cilantro. Refrig. covered up to 24 hours. Serve with wanton crips and remaining dressing.
Baking sheet with foil and non stick place 12 wrappers on sheet. brushe with oil (sesame or peanut) 425 5-6 minutes. Cool. break into pieces.
