Bean Bruschetta

Ingredients

  • 1/2 onion
  • 1/2 red pepper
  • white wine
  • spice de provence
  • salt
  • garlic
  • white kidney beans
  • chicken stock
  • bagette

Preparation

Step 1

Dice onion and red pepper and cook in olive oil for 20 minutes.
Add salt, spice de provence and garlic.
Add white wine.
Let simmer.
Add beans and chicken broth (just enough to keep beans wet, but not make a soup).

Slice baggette diagonally and brush with olive oil.
Bake til crisp.

Top bread slices with bean mizture and serve.
