Ingredients
- white sauce:
- 1 lb fresh chopped spinach (or frozen)
- 1 onion, chopped
- 1 lg clove garlic, pressed
- 1 TBSP fresh or dried parsley
- 1/2 tsp fresh or dried basil
- herb salt to taste
- freshly ground pepper
- 1 TBSP butter
- 2 eggs
- 4 TBSP butter
- 2 C milk
- 1/4 C flour
- her salt to taste
- 5 oz grated cheese

Step 1
Make crust (buy)
Wash spinach well, steam a few minutes and dry very well.
In a skillet, melt 1 TBSP butter and saute for 5 minutes the onion, garlic, mushrooms, parsley basil, salt and pepper
In medium pot,, melt 4 TBSP butter - remove from heat and stir in 1/4 C flour to make a roux.
Replace on heat and gradually add 2 C milk and salt and pepper to taste.
Stir constantly and bring to a boil.
Reduce heat and add cheese.
Stir til cheese melts.
Beat eggs lightly and mix in.
Add sautéed vegetables and spinach.
Mix all together well.
Spoon into pie crust and bake 45 minutes at 350 or tip golden and firm.
