Apple Pecan Muffins

These great tasting apple muffins are a nice brunch or breakfast treat. Make them for the fall season or for any time of the year.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon salt
- 1/2 teaspoon nutmeg
- 2 eggs
- 1 cup granulated sugar
- 1/3 cup vegetable oil
- 2 cups finely chopped apples
- 1 cups chopped pecans
- 1 cup flaked coconut
Preparation
Step 1
In a large bowl, combine the flour, baking soda, salt and nutmeg. In a separate bowl, beat eggs, sugar and oil. Stir in chopped apples, pecans and coconut. Stir apple and egg mixture into dry ingredients just until moistened. Fill greased and floured muffin cups about three-fourths full. Bake at 350° for 25 to 30 minutes. Cool in pan 10 minutes then remove to a rack. Makes about 18 muffins.

I have been searching for a recipe to use up some leftover coconut and pecans that i had from making christmas cookies when I stumbled upon this recipe. I have to say these are by far the BEST muffins I have ever made and maybe have ever eaten. They are sweet and delicious and moist and just so good. The only thing I might change next time is also add some cinnamon and maybe ground ginger just for some added flavor. But other than that they are amazing!!!!!!
I cooked the recipe just like it said except no coconut. I cooked them for 25 minutes. They were over done and the recipe did not tell you what kind of muffin pans to use. I used my 2 inch pans.
If using a 2 inch muffin pan cook for 15 to 17 minutes and they are done and great!!!!! I wish I had cooked the first twelve for this amount of time too!!!!
