Ingredients
- 1/4 C olive oil
- 1/2 C chopped onion
- 1 tsp garlic, finely chopped
- 1 medium sized sweet red pepper or 1 green pepper, seeded, deribbed and cut into strips
- 8 pieces asparagus
- 1 tomato, chopped
- 1/2 Cup fresh peas
- 1 /s tsp saffron, ground
- 8 medium sized mushrooms, sliced
- 2 artichokes, cut in quarters
- 6 C boiling water
- 3 Cups medium grain rice or long grain rice, RAW

Preparation
Step 1
Preheat oven to 400
In 14 in paella pan or a skillet or casserole at least 14 inches in diameter and 2-2/12 inches deep, heat the oil over medium heat.
Boil water - add saffron to it
Add all the vegetables stirring frequently for 1 minute
Add rice, salt, pepper and water
Set pan on floor of the oven and bake uncovered for 20 minutes or until liquid has been absorbed by the rice and vegetables
At no point should the paella be stirred
When paella is done, let it rest for 8-10 minutes
