HG Shrimp Scampi w/Fettuccine

Ingredients

  • 1 small lemon
  • 2 pack. House Food Tofu Fettuccine
  • 1/4 cup chopped onion
  • 1 tsp chopped garlic
  • 8 oz. raw shrimp, peel & deveined
  • 1 plum tomato chopped
  • 2 tbsp. light butter spread
  • 2 tsp reduced-fat Parmesan-cheese
  • Salt
  • Pepper
  • Crushed red pepper chopped parsley

Preparation

Step 1

Cut lemon in half & squeeze juice from ½ into small dish, set aside. Cut the other ½ into wedges, set aside as well. Use a strainer to rinse and drain noodles well. Pat dry. Microwave for 1 minute. Drain excess liquid. Dry as thoroughly as possible, using paper towels. Cut noodles up a bit, using kitchen shears, set aside.

Bring a sprayed skillet to medium heat. Add onion & garlic and cook until softened, 2-3 minutes. Add shrimp & tomato. Stirring occasionally, cook until shrimp are opaque, about 2 minutes. Add lemon and continue to cook and stir for 1 minute.

Raise heat to medium high, add noodles, & mix well. Continue to cook for 1-2 minutes until entire dish is hot and shrimp are cook through. Add butter and stir.

Top with 1 tsp. Parmesan Topping. Garnish with lemon wedges.
