Roasted Red Potatoes with Bacon and Cheese

Ingredients

  • 1/2 c. light ranch dressing
  • 1/2 c. shredded cheddar cheese
  • 1/4 c. bacon bits
  • 2 pounds small red potatoes quartered
  • 1 Tbsp. chopped fresh parsley

Preparation

Step 1

Heat oven to 350.

Mix first 3 ingredients in large bowl. Add potatoes; toss lightly.

Spoon into lightly greased 9x13 baking dish; cover.

Bake 40 min. Uncover; bake 15 min or until potatoes are tender. Top with parsley.
