  • 6 ounces fiddleheads (or equal parts fiddleheads and asparagus)
  • 1 tbsp. EVOO
  • grated lemon rind to taste
  • salt and pepper to taste

Preparation

Step 1

* Toss fiddleheads with lemon zest, salt, pepper and oil.

* Place on a parchment lined baking sheet and roast at 400 for 20-25 minutes, until crispy and done.
