GROUND*****Salsbury Steaks with Mushroom Gravy

Update - 22/12/14 - divided into two patties, mine an ounce smaller, added a minced shallot and served over the rice/lentil/bean mix I have - best yet!

Ingredients

  • 8 oz. lean ground beef
  • 1 tbsp. Montreal steak spice spread
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 1 teaspoon EVOO
  • 1/4 pound thinly sliced fresh mushrooms (about 6 or 7)
  • 1/4 cup red wine
  • 1 1/2 Tablespoons flour
  • pinch dried thyme (or fresh)
  • 1 can consome
  • chopped parsley (optional)

Preparation

Step 1

* Shape beef into 2 or 3 oval steaks, spread with steak spice, salt & pepper on both sides, cover and refrigerate until serving time.

* Reheat skillet and add oil; add steaks and fry about 2 minutes on each side, or until browned and crisp on surface. Remove to platter.

* Saute mushrooms and shallots, stirring occasionally, over medium heat 3 to 4 minutes, or until golden; deglaze with red wine and cook until almost gone. Remove from skillet and set aside.

* Add flour and seasonings to pan drippings and cook roux. Add consome to skillet and bring to boil, stirring until smooth and thickened. Add steaks and simmer in gravy to desired doneness, about 3 minutes for medium. Serve steaks with gravy. Garnish with parsley, if desired.
