  • Peanut Sauce
  • 3 TBSP peanut butter
  • 2 TBSP soy sauce
  • 2 garlic cloves minces and ground into paste
  • 1 TBSP fresh lime juice
  • 1 TBSP water
  • 2 tsp honey
  • 1 tsp fish sauce
  • 1 tsp sriacha sauce
  • Chicken Salad
  • 6 oz cooked boneless chicken, skinless, cut in bite-sized pieces
  • 2 cups broccoli slaw mix
  • 2 TBSP dry-roasted unsalted peanuts, crushed
  • 8 large Bibb lettuce leaes

Step 1

Whisk together peanut butter, soy sauce, garlic, lime juice, water, honey, fish sauce and Sriacha for the sauce in a small bowl.

Toss chicken , slaw mix, and peanuts with peanut sauce; chill, covered until needed. To serve, divided salad among lettuce leaves.
