Tilapia Fish Tacos

Ingredients

  • 1 t. garlic powder
  • 1 t. chili powder
  • 1/2 t. cayenne pepper
  • 1 t. ground cumin
  • Juice of 4 limes
  • Salt and pepper
  • 16 oz. tilapia, cut into bite sized strips
  • 3 T. olive oil
  • 6 (6 inch) soft corn tortillas
  • 1 C. shredded cheddar and Jack cheese mix
  • 1 C. pico de gallo
  • 1/2 C. chopped cilantro
  • Salsa (optional)

Preparation

Step 1

In a glass bowl, combine garlic and chili powder, cayenne, cumin, and lime juice. Season to taste with salt and pepper, and mix well. Marinate fish in mixture for 2 hours in the refrigerator. Drain fish.

Heat oil in a large saute pan over medium heat.

Saute fish 5-7 minutes. Meanwhile, heat another large saute pan over medium heat.

Warm each of the tortillas, 1 minute each on each side.

Evenly distribute the cheese, sauteed fish, picco de gallo, and cilantro on each of the tortillas.

Serve with salsa if desired.
