Ingredients

  • 2 cloves garlic
  • 1 can (14.5 oz.) fire-roasted diced tomatoes,
  • like Muir Glen
  • 1 jar (12 oz.) roasted red peppers, drained
  • and chopped
  • 1/2 jalapeno pepper, seeded and minced
  • 1 large lemon, zested and juiced
  • 1/4 cup chopped fresh cilantro

Preparation

Step 1

In food processor, puree garlic 1 min. or until finely
minced. Add tomatoes, roasted peppers and jalapenos.
Pulse 5 times or until combined. Spoon mixture into
serving bowl. Stir in 2 Tbs.lime juice, 1 tsp.lime zest
and cilantro. Serve dip with tortilla chips, if desired.
