Ingredients
- 5 lbs pork shoulder or butt
- 2 cups chopped onion (1 large)
- 5 tbsp finely chopped garlic (15 medium)
- 1/2 cup cooking oil
- 4 tbsp ground cumin
- 3 tbsp ground coriander
- 10 cloves
- 2-inch cinnamon stick
- 2 tbsp paprika
- 1 tbsp ground cayenne
- 1 tbsp salt
- 2 cups water
Preparation
Step 1
Preheat oven to 400 degrees.
Combine onions, garlic, and spices and mix well.
Wearing plastic gloves, rub the spice mixture liberally all over the pork.
Add water to the pan.
Cover with foil and bake for 2 hours.
Remove from oven and allow to cool for 20 minutes.
Pull pork and add pan juices and mix well.
