Ingredients

  • 1 onion finely chopped
  • 1/2 cup diced bacon
  • 1 tbsp. olive oil
  • 2 cloves garlic finely chopped
  • 1 tsp. cumin
  • 2 pounds stew meat
  • 1 can (14 oz.) tomatoes with juice
  • 2 1/2 cups beef broth
  • 1 tsp. chili powder
  • 1 tsp. sugar
  • Salt and pepper to taste
  • 1 can (14 oz.) pinto beans

Preparation

Step 1

Heat the oil in a large saucepan over medium heat. Add the onion and bacon and saute until lightly browned, 7-8 mins. Add the garlic and cumin and saute for 1 min.

Add the beef and our in the tomatoes and broth. Stir in the chili powder and sugar. Season with salt and pepper.

Simmer over medium heat for 10 minutes. Cover and simmer over low heat for 1 hour.

Uncover and stir in beans. Cook until the beef is very tender, about 1 hour.

Serve in bowl with a dollop of sour cream and flour torts on the side.
