Tomato, Corn & Greenbean Salad

Ingredients

  • 2 ears of corn, cut from the cob
  • 1 pint grape tomatoes, sliced
  • 2 cups green beans, cut into 1-inch pieces and blanched
  • 1 shallot, minced
  • Olive oil and red-wine vinegar

Preparation

Step 1

In a bowl, mix corn, tomatoes, green beans, and shallot. Drizzle with oil and vinegar, and season with salt and pepper to taste.
