  • 1 loaf italian bread
  • 4 large tomatoes
  • 1/2 small red onion
  • 1/2 C. chopped basil
  • 1/4 C. olive oil
  • 1/2 tsp. oregano
  • 1/2 tsp. pepper

Step 1

1. Cut unpeeled cucumbers into bite-sized chunks. In a bowl toss cucumbers with 1/3 tsp. salt. set aside.

2. Cut bread into 1 1/2 inch cubes. Cut tomatoes into wedges. Thinly slice red onion. Chop basil.

3. In a large bowl, mix cucumbers, bread, tomtoes, onion, chopped basil, olive oil, oregano, pepper, and 3/4 tsp. salt. Toss to coat.
