Ingredients

  • 6 cups total flour (1 cup all-purpose, 3 cups quick oats, 2 cups ww pastry flour)
  • 3/4 cups sugar (or 1/2 cup brown sugar, 1/2 cup maple syrup)
  • 3 tsp baking powder
  • 1.5 tsp baking soda
  • 1.5 tsp salt
  • 3 tsp pumpkin pie spice
  • 3 eggs (or 2 eggs, scoop coconut oil)
  • 3 cups buttermilk or yogurt
  • 3 medium applies grated
  • 1 can (398 ml) pumpkin puree
  • Optional: few handfuls of chocolate chips

Preparation

Step 1

Beat wet ingredients (and sugar)
Mix dry ingredients in a separate bowl
Add dry to wet and mix until just combined, throw in chocolate chips and mix
For muffins: Bake @ 350 for about 25-30 minutes
For loaf: Bake @350 for about 1 hour
