Ingredients
- 1.5 cups cubed red potatoes
- 1/4 cup finely chopped onion
- 1/4 cup Dijon mustard
- 1/4 cup white wine vinegar
- 1/4 cup lemon juice
- 2 t. dried tarragon
- 1 clove minced garlic
- 1/2 t. salt
- 1/2 t. pepper
- 1 cup canola oil
- 2 pkg. (10 oz. each) romaine salad mix
- 4 cups cubed cooked chix
- 1 cup chopped celery
- 16 bacon strips. cooked and crumbled

Preparation
Step 1
Cook potatoes in water until tender. Drain, cool completely.
In small bowl, whisk onion, mustard, vinegar, lemon juice & seasonings. Gradually whisk in oil until blended.
In large bowl, combine salad mix, chix, celery and potatoes. Just before serving add dressing, toss to coat. Top with bacon.
