Ingredients

  • 1.5 cups cubed red potatoes
  • 1/4 cup finely chopped onion
  • 1/4 cup Dijon mustard
  • 1/4 cup white wine vinegar
  • 1/4 cup lemon juice
  • 2 t. dried tarragon
  • 1 clove minced garlic
  • 1/2 t. salt
  • 1/2 t. pepper
  • 1 cup canola oil
  • 2 pkg. (10 oz. each) romaine salad mix
  • 4 cups cubed cooked chix
  • 1 cup chopped celery
  • 16 bacon strips. cooked and crumbled

Preparation

Step 1

Cook potatoes in water until tender. Drain, cool completely.
In small bowl, whisk onion, mustard, vinegar, lemon juice & seasonings. Gradually whisk in oil until blended.
In large bowl, combine salad mix, chix, celery and potatoes. Just before serving add dressing, toss to coat. Top with bacon.
