Ingredients
- 1 tbsp (15 mL) vegetable oil
- 1 cup cup(250 mL) (250 mL) peeled and chopped squash
- 1 onion , chopped
- 2 cloves garlic , minced
- 1 carrot , chopped
- 1 stalk celery , chopped
- 1/2 tsp dried thyme
- 1/2 tsp pepper
- 4 cups chicken stock
- 1 can (28 oz/796 mL) diced tomatoes
- 1 cup frozen corn kernels
- 1 cup frozen lima beans
- Fresh thyme
- Oregano

Preparation
Step 1
In saucepan, heat oil over medium heat; cook squash, onion, garlic, carrot, celery, thyme and pepper, stirring occasionally, until softened, about 10 minutes.
Add stock, tomatoes, corn and lima beans; bring to boil. Reduce heat, cover and simmer until beans are hot.
Season with fresh thyme and oregano to taste.
