Ingredients

    tbsp (15 mL) vegetable oil

  • 1

    cup cup(250 mL) (250 mL) peeled and chopped squash

  • 1

    onion , chopped

  • 2

    cloves garlic , minced

  • 1

    carrot , chopped

  • 1

    stalk celery , chopped

  • ½

    tsp dried thyme

  • ½

    tsp pepper

  • 4

    cups chicken stock

  • 1

    can (28 oz/796 mL) diced tomatoes

  • 1

    cup frozen corn kernels

  • 1

    cup frozen lima beans

  • Fresh thyme

  • Oregano

Directions

In saucepan, heat oil over medium heat; cook squash, onion, garlic, carrot, celery, thyme and pepper, stirring occasionally, until softened, about 10 minutes. Add stock, tomatoes, corn and lima beans; bring to boil. Reduce heat, cover and simmer until beans are hot. Season with fresh thyme and oregano to taste.
