Ingredients

  • 3 pounds large shrimp, cleaned
  • 1/2 cup creamy peanut butter
  • 1/4 cup butter
  • 2 tbsp lemon juice
  • 1/2 cup coconut milk
  • Several dashes hot sauce
  • 1 tbsp soy sauce

Step 1

1. In a small saucepan, combine peanut butter,butterand lemon juice. Bring just to a boiling;reduce heat, cook and stir over low heat for 2 minutes( mixture will be thick). Remove from heat. Gradually stir in coconut milk and hot sauce. Remove half of the sauce and reserve for use as a dipping sauce.Stir in soy sauce in remaining sauce. Thread shrimp loosely onto skewers( if using wooden skewers- soak in water for 30 minutes to prevent burning). arrange on a single layer on unheated rack of broiler pan. Brush soy sauce mixture on shrimp. Cover and letstand for 30 minutes.
2. Broil shrimp 3 inches from heat for 3-4 minutes or until shrimp turns pink, turning once
3. Arrange on a Serving Platter and serve with dipping sauce
