Chicken Pot Pie Stew - Sweet Tomatoes

Sweet Tomatoes Recipes for chicken pot pie stew, Serve with Warm buttermilk biscuits.

Ingredients

  • 1 1/2 lb cubed red potatoes (boil for 10 mins and set aside)
  • 1 lb chicken cooked and diced into bite size pieces
  • 2 tbsp canola oil
  • 3/4 lb carrots sliced 1/4 inch
  • 1/4 lb celery sliced 1/4 inch
  • 1/2 pound pearl onions
  • 2 1/2 tsp dried thyme
  • 1/2 pound butter
  • 1 tablespoon garlic minced
  • 3/4 cup white flour
  • 5 cups chicken broth
  • 2 1/2 tsp salt
  • 1 tsp white pepper
  • 1/4 tsp black pepper
  • 2 1/2 cups whole milk
  • 1 1/4 cup whipping cream
  • 1/4 lb peas
  • 1/2 cup chopped fresh parsley

Preparation

Step 1

In Saucepan pour canola oil and vegetables including Thyme and saute on medium heat approximately 10 minutes until tender. Set aside.

Melt Butter in 5 Quart pot. Add Garlic and saute on medium for 2 mins. Stir in flour and cool on low heat for 5 minutes.

Add broth and spices to pot. Whisk together with wire whip. Heat to a low boil on medium heat and simmer for 5 minutes until thickened. Stir constantly.

Stir in Milk and cream. Simmer for 3 minutes.

Add peas, Parsley, cooked potatoes, vegetables and chicken to broth. heat and serve. Season to taste with Salt and pepper.
