Ingredients
- vegetable oil
- 1/4 cup onion, chopped
- 1 small clove garlic, minced
- 1/4 cup bell pepper, chopped
- 2 chili pepper, minced
- 3 plum tomato, chopped
- 8 flour tortillas
- 2 cups Cheddar cheese, shredded
- 1 1/2 cups cooked chicken
- salsa
- fat-free sour cream
Preparation
Step 1
1. In a medium heavy skillet sauté the onions, garlic, and peppers in 2 tablespoons oil until soft.
2. Add the chile peppers and tomatoes and simmer for a few minutes more.
3. Add the chicken and stir well to combine. Maintain on low heat while preparing the tortillas.
4. In another heavy medium sized skillet, heat a thin layer of oil over medium low heat.
5. Place a tortilla in the pan and sprinkle with 1/4 cup cheese. Add about a quarter of the chicken mixture and top with another 1/4 cup cheese.
6. Cover with another tortilla and cook for 2-3 minutes or until golden brown. Flip the quesadilla over and cook for an additional two minutes.
7. Remove from the heat and cut into wedges. Keep warm while frying the remaining quesadillas. Serve with salsa and sour cream
