Pumpkin Bread Pudding

Ingredients
- 2 cups skim milk
- 8 oz. egg beaters
- 2/3 cup sugar
- 1 tsp. vanilla
- 1/2 tsp cinnamon
- 1 tsp. pumpkin pie spice
- 1 can (15oz) pure pumpkin
- 8 slices whole wheat bread, torn in pieces
- 1 tbsp butter, cut into small pieces

Step 1
* Preheat oven to 350*
* In large mixing bowl combine first 7 ingredients (all except bread). Mix well.
* Place torn bread pieces into 2 quart baking dish. Pour egg/pumpkin mixture evenly over bread. Allow to pumpkin mixture to soak into bread for 10 minutes.
* Dot top with pieces of butter.
* Bake for 1 hour & 15 minutes.
* Serve warm with whipped topping.
