Ingredients
- 1 large whole chicken, cut into pieces
- 1/2 t. salt
- 1/4 t. black pepper
- 1 C. buttermilk
- 2 T. water
- 2 eggs
- 1 C. bacon drippings
- 1 C. lard or vegetable shortening
- 1 T. unsalted butter
- 2 C. flour
- 1/2 t. paprika

Preparation
Step 1
Place chicken pieces in a 13 x 9 inch baking dish. Sprinkle evenly with salt and pepper. Set aside for 15 minutes.
In a medium bowl, whisk together buttermilk, water, and eggs. Pour mixture over chicken. Cover and refrigerate 1 hour.
In a large cast iron skillet or Dutch oven, heat bacon drippings, large or shortening, and butter to 350 degrees.
Place flour in a shallow dish and add paprika. Remove chicken from buttermilk mixture and roll in flour mixture, shaking off excess.
Fry in batches 10-15 minutes on each side, or until chicken is completely done. Remove and drain on paper toweling and seve warm.
