Pineapple Salsa

Fire up the grill and make this pineapple fruit salsa at your next backyard BBQ.

Ingredients
- 1 small pineapple
- 1 small red onion, diced
- 3 tbsp chopped cilantro
- 2 tbsp fresh lime juice
- 1 tbsp rice vinegar
- 2 tbsp extra-virgin olive oil
- 1 tsp salt
- 1/2 fresh jalapeño chile, seeded and minced
Preparation
Step 1
Preheat grill to medium-high.
Cut off leafy top of pineapple and enough of bottom so fruit rests flat on a cutting board. Slice off skin and remove any “eyes” with a paring knife. Cut fruit into 4 or 5 slabs.
Grill 2 minutes per side or until fruit starts to brown.
Cool and dice. Mix in remaining ingredients.
