Jerk Roasted Turkey Breast

Ingredients

  • 1 shallot (peeled and rough chopped)
  • 3 each scallions
  • 3-5 cloves garlic (peeled)
  • 1 scotch bonnet or habanero pepper (or 2 jalapenos)
  • 10 branches fresh thyme (picked from stem)
  • 1 knob ginger (peeled and rough chopped)
  • 1 tbsp. ground allspice
  • 1 tsp. ground cinnamon
  • 1 tsp. ground cloves
  • 1/4 c. molasses
  • 2 tbsp. kosher salt
  • 1/2 c. vegetable oil
  • 1 boneless turkey breast (approximately 3#)

Preparation

Step 1

Combine all ingredients, except turkey in a food processor and run until smooth. Place turkey breast in a mixing bowl or other appropriate container, pour mixture over and rub to make sure all is coated evenly, cover and allow to marinate in refrigerator over night or at least several hours. Place marinated turkey breast a roasting pan and place in a preheated 400-degrees oven and roast for approximately 45 minutes to and hour or until an internal temperature of 155-degrees is achieved. Remove from oven and allow to rest before slicing. Slice and arrange onto a platter.
