Applesauce Cake

This recipe is from Virginia Banning. My mother baked this cake at Christmas time as gifts. Rarely did she make it during the rest of the year.

Ingredients

  • 1/2 cup shortening (Crisco oil works fine)
  • 2 cups sugar
  • 2 1/2 cups sifted flour
  • 1/4 tsp salt
  • 1 egg, beaten
  • 1 1/2 cups applesauce
  • 1 cup boiling water (? 1/2 cup)
  • 1/2 cup nuts
  • 1 cup raisins
  • 2 tsp baking soda
  • Cinnamon and nutmeg to taste

Preparation

Step 1

Cream sugar and shortening. Add egg and beat well. Combine dry ingredients. Add applesauce to egg mixture. Add boiling water. Mix in dry ingredients. Mix in raisins and nuts.
Bake 350 degrees 50-60 minutes, til done.
