Fiesta Rice and Beans

Ingredients

  • 1 cup uncooked brown rice
  • 2 cups low-sodium chicken or vegetable broth
  • 1 teaspoon olive oil
  • 1/4 cup red onion, minced
  • 1 cup salsa
  • 15 ounce can black beans, drained and rinsed
  • 2 tablespoons lime juice
  • 1 cup avocado, chopped

Preparation

Step 1

Combine brown rice and broth in a saucepan; bring to a boil and reduce to simmer for 45 minutes.
Heat oil in a large skillet over medium heat. Saute onion for 3 minutes. Add salsa, black beans and lime juice until warm.
Combine the bean mixture, cooked brown rice and chopped avocado.
