Ingredients
- 2 pkgs. (10 oz. each) frozen broccoli spears--OR USE FRESH
- 2 pounds fresh flounder fillets, thawed
- 3/4 cup margarine
- 3/4 cup flour (for sauce)
- flour (for dredging)
- 2 cups milk
- 1 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 6 oz. Velveeta cheese
Preparation
Step 1
1. Cook broccoli; drain well. Arrange in a 9 x 13 baking dish. Cut flounder fillets into serving sized pieces, if necessary. Dredge each fillet in flour. Fold fillets; place on broccoli.
2. Melt the margarine in a saucepan; sauté onion until tender. Stir in flour; cook, stirring constantly, until bubbly. Add mild. Cook over medium heat, stirring constantly, until sauce thickend and bubbles. Stir in salt, pepper and cheese. Continue stirring until the cheese melts. Pour over fish.
3. Bake in moderate oven--350 degrees for 30 minutes, or just until the fish flakes easily with a fork.
