Roasted Corn with Radish Salad & Avocado Herb Dressing

Ingredients

  • Dressing:
  • 1/2 ripe peeled avocado, sliced
  • 1 t. lime juice
  • 2 ears corn with husks
  • 2 heads Boston lettuce
  • 1/2 c sliced radishes
  • 1/2 C avocado herb dressing
  • 1/2 C mayonnaise
  • 1/4 C finely chopped green onions
  • 1/4 C lite sour cream
  • 1 T chopped parsley
  • 1 T chopped chives
  • 1 t. chopped tarragon
  • 1 oz. chopped prociutto
  • 1/8 t. salt
  • 1/2 avocado
  • 1 clove minced garlic
  • 2 T water
  • 1 T white wine vinegar
  • 3 drops hot sauce

Preparation

Step 1

Preheat oven to 450.
combine sliced avocado & lime juice in small bowl; cover & refrigerate.
terim both ends of corn, leaviang husks intact. Place on baking sheet, bake for 20 min. Cool; remove husks & cut kernels from cob.
Reserve 4 whole lettuce leaves. Chop remaining lettuce. Combine with avocado mixture, corn & radishes. spoon lettuce mixture into lettuce leaves. Serve with avocado herb dressing.
For dressing combine first 10 ingredients in food processor; process til smooth. With processor running, pour water, vinegar & hot sauce thru chute & process til blended.
