Ingredients
- 4 pounds sweet potatoes (8-10 potatoes)
- 1/2 cup firmly packed light brown sugar
- 1/2 cup (1 stick) unsalted butter, cut into 4 pieces
- 8 medium-sized cloves of garlic, smashed and peeled
- 3 Tablespoons soy sauce
Preparation
Step 1
1. Prick sweet potatoes 4-5 times with a fork. Arrange in ring on microwave-safe platter. Microwave at 100% power 15-18 minutes, until barley tender.
2. Stir together sugar, butter, garlic and soy sauce in microwave-safe 4 cup measure. Cover tightly with plastic wrap. Microwave at 100% power for 2 1/2-3 minutes, shaking the measure once.
3. Cool potatoes slightly. Peel; halve lengthwise. Cut each half lengthwise into 3 or 4 wedges. Arrange spoke-fashion in 12 inch quiche pan (or large pie plates). Fill the center with overlapping round potato slices (looks like a flower). Pour sugar mixture over the potatoes. Cover dish tightly with plastic wrap.
4. To serve: Microwave at 100% power for 7 minutes. Spoon syrup over potatoes.
