Ingredients

  • 3

    eggs

  • cup sugar

  • 1

    cup oil

  • 3

    cups flour

  • 1

    cup walnuts, chopped

  • pinch salt

  • 2

    tsp. baking powder

  • 1

    tsp. vanilla

Directions

Cream together sugar and eggs. Combine flour, salt and baking powder. Add oil alternately with flour mixture. Add vanilla. Add nuts. Pre-heat oven to 325 degrees. Spray cookie sheets (I use jelly roll pans) with Pam. Using a spoon and a rubber spatula, make 2 long strips on each cookie sheet, using the entire length of the pan. Pat down so each long strip is about 3 inches wide (or you can make them smaller, if you wish). Sprinkle with cinnamon and sugar mixture. Bake for approximately 25 minutes or until lightly browned. Remove from oven and cut with a pizza cutter on a diagonal (about ½ to ¾ inches in width). Spread each piece apart so there is room in between each slice and return to oven until brown and crisp. When cooled, store in a tin or plastic air-tight container.
